Over the last eight days, Sarah has been catering for a cancer retreat held at Peak Functions and requiring a completely different twist on ingredients and methods.  Here’s a delicious treat with health in mind that can be made in minutes with no mess and eaten in volumes if wished!

Raw Vegan Brownie

Brownie base:

1 cup walnuts

1 cup dates

¼ cup cacao powder

Food process until blended & will become sticky, press into pan.  Put in freezer while preparing the topping.

Topping:

3 ripe avocados

½ cup raw honey

¼ cup cacao powder

2 tablespoons coconut oil

1 tablespoon vanilla extract

1 pinch of salt (or tamari)

1 pinch cinnamon

Put all the ingredients into the processor and blend until smooth, spread over brownie base and put in freezer to set for at least an hour (if you can keep away from nibbling for that long!). Cut into squares and store in freezer as this will soften very rapidly at room temperature.
