The amazing Sarah from Peak Functions does it again!  Here’s a gorgeously festive treat for you to wow your friends and family with this silly season!!

Chocolate Florentine Bites

This recipe makes 60 bite-sized pieces, and can easily be tweaked by adding your  own favourites e.g.  ginger, orange peel or even peppermint essence.

400g dark chocolate

1 cup cornflakes

1 cup currants

2 cups flaked almonds

2 cups glace cherries, cut in half

1 cup mixed peel

1 x 400g can sweetened condensed milk

Method

1.   Preheat the oven to 180C

2.  Spray a 20cm x 30cm sponge roll tin with baking spray and line with non-stick baking paper.

3.  Melt the chocolate in the microwave or over a saucepan of simmering water and spread evenly over the base of the prepared tin, then refrigerate to set.

4.  Put the cornflakes, currants, flaked almonds, cherries mixed peel and condensed milk in a large bowl. Mix well with a spatula then spread over the chocolate base.

5.  Bake for 12 -15 minutes until golden brown.

6.  Cool in the tin then chill.

7.  Cut into bite-sized squares just before serving.
